Profile
Adachi Jozo 足立醸造株式会社 is a long-established soy sauce brewery in central Hyogo, known for producing traditionally crafted, additive-free soy sauce using time-honoured methods. Founded in the late 19th century, the company continues to brew in large wooden barrels (kioke), allowing the sauce to ferment slowly and develop deep, complex flavours.
For visitors interested in authentic Japanese food culture, this is a rare opportunity to experience a working example of traditional fermentation that has changed little over generations. You need to contact the brewery in advance for warehouse tours (Japanese).
The brewery specialises in naturally brewed soy sauce made from carefully selected domestic soybeans and wheat, combined with local water. The result is a rich, well-balanced shōyu with layered umami and aroma. In addition to classic dark soy sauce, you’ll also find lighter varieties and other seasonings, all produced with the same commitment to careful, unhurried brewing.
Adachi Jozo’s on-site shop makes this a worthwhile stop for travellers exploring rural Hyogo. Alongside their signature soy sauces, they stock locally produced sake and a selection of regional food products, allowing visitors to discover more of the area’s flavours in one place. Whether you are a keen home cook or simply looking for an authentic souvenir, Adachi Jozo offers a genuine taste of Hyogo’s culinary heritage.
